Creamy Cucumber Salad 

Here is a super easy, light and delicious summer side dish! I made this several days ago and it tasted even better than when I first made it.  

**Ingredients** 
  • 3 mini cucumbers peeled and sliced 
  • 1/2 med yellow onion thinly sliced 
  • 2 tbsp mayo 
  • 1 tbsp apple cider vinegar 
  • 1/2 tbsp fresh dill 
  • Fresh chopped basil 
  • Salt & pepper to taste 
  1. Combine all ingredients but cucumbers in a bowl and whisk
  2. Add cucumbers and stir until cucumbers are coated 
  3. Cover with plastic wrap and refrigerate up to an hour before serving or make a day ahead!! 

Pickled Habanero Radishes 

Radishes are one of my favorite veggies! Roasted, raw, in a salad, pickled, I love them any way! Esp in the summer! I had a ziplock bag full that I had rinsed and cut the stems off so I could pull them out to snack on; I really love them just dipped in a little salt but they needed to be used and I have a big container of home grown habaneros so I thought I'd make some spicy pickled radishes! These were SO easy and turned out really delicious. I looked up a recipe on Pinterest but ended up tweeking it, it didn't call for habaneros and had too much honey IMP. 
If you're a lover of radishes and spice, you'll love these. These will be great on tacos, mixed into a cucumber & tomato salad or eaten alone. 
 PS. They are not that spicy! The habanero adds great flavor and a bit of kick. 
** Ingredients**
  • 1 1/2 cups red radishes thinly sliced 
  • 1 green habanero stem off and cut in half 
  • 1 large garlic clove skin removed and cut in half 
  • 3/4 cup water 
  • 1/2 cup apple cider vinegar 
  • 1 tbsp honey 
  • 1/2 tbsp salt 
  1. Add pepper, garlic & radishes to mason jar. 
  2. In a small pot add water, vinegar & honey. Heat until honey is melted. This takes just a few min. 
  3. Let liquid cool then poor into mason jar. 
  4. Put the lid on tight and refrigerate for 24hrs! That's it!

Chipotle Cheddar Potato Cakes 

As of Sunday night I still had left over mashed potatoes so I decided to make potatoe cakes! These were super easy and very tasty. I recommend using at least day old mashed potatoes; using freshly made ones will be too creamy and won't hold together as well.  

**Ingredients** 
  • 2 cups left over mashed potatoes 
  • 1 egg
  • 11/2 cups breadcrumbs 
  • 1/2 cup shredded cheddar cheese 
  • 1 diced chipotle pepper 
  • 2 tbsp vegetable oil 
  • Green onions for garnish 
  1. Combine all ingredients in a mixing bowl except 1/2 cup breadcrumbs and mix together. 
  2. Add oil to pan over high heat. 
  3. Use an ice cream scooper to scoop out potatoes then form patties. 
  4. Put 1/2 cup breadcrumbs on a plate and press patty in crumbs on each side then add to pan. 
  5. Cook until golden brown , about 1 min per side. 
I had chipotle dressing from a local Mexican restaurant that I heated and put on top but you can use whatever you'd like! Ketchup, remoulade sauce, spicy mayo etc.

Almond Milk 

Decided to give almond milk another shot. I originally didn't care for almond milk bc of how thick it is (yuck)! Found this at Kroger and gave it a try. Glad I did bc I LOVE it! I got the unsweetened bc I don't want the sugar, reason I don't want regular milk. Anyway this is delicious! Creamy Brown Butter Garlic Potatoes

Yesterday I had a craving for a southern dinner , however, my husband was too hungry to wait until I got home to cook and went to KFC -whatever dude I opted to stay at my parent's house and eat left overs. While the left overs were tasty and filling, I still had a craving for something southern, creamed potatoes to be exact! I only had half a potato, long story, but that would suffice for 1 serving.  But I'll list the amount you'll need for about 4-6 servings. I would've made more but like I said I only had 1/2 a potato. 


**Ingredients**
  • 3-4 large baking (Idaho) potatoes peeled and cut into chunks 
  • 3 tbsp unsalted butter 
  • heavy cream 
  • 2 garlic cloves minced 
  • Ground black pepper 
  • Salt 
  1. Bring large pot of salted water to a boil then add potatoes and cook until fork tender. About 15 minutes 
  2. While potatoes are cooking add butter to a pan over med-low heat and cook until browned. 
  3. After potatoes are done drain them then add back to pot. 
  4. Add garlic to butter until fragrant (1-2 minutes) 
  5. Add butter and garlic except 1-2 tbsp, to potatoes along with several grinds of pepper. Or a 4 finger 'pinch'. Add cream a little at a time until you get the consistency you'd like. Obviously the more cream the creamier they'll be. If you don't want to use all cream, use milk or veggie stock to cut down on the fat. But I'd advise against that! 
  6. Using either a hand held immersion blender or hand help blender, blend until creamy.
  7. Put potatoes in a large bowl and pour the rest of the butter - garlic mixture on top and serve! 

Southwest Breakfast Skillet

On the weekends we like to sleep in...who doesn't? By the time we roll our asses out of bed it's time for brunch! This is what I whipped up Sunday morning. Super easy and really good! I would have served bloody Mary's with it but didn't even think about it at the time, which is quite shocking. 

  • 2 cups Hash browns
  • 1/2 cup seasoned black beans  
  • 1/3 cup diced tomatoes 
  • 4 oz chorizo 
  • 1-3 eggs (I only had one on hand) 
  • Goat cheese 
  • Salsa verde 
  • Fresh cilantro 
  1. Cook hash browns according to instructions on bag; in a pan with olive oil on high heat and until crispy. 
  2. Cook chorizo in separate pan and add to hash browns when they are done. 
  3. Add beans and tomatoes to hash browns and mix. 
  4. Crack eggs on top then cover with a lid and let cook about 5 minutes.
  5. Remove lid, crumble goat cheese on top and drizzle salsa verde all over already my with cilantro. 
  6. EAT that shit! Would be good with som sour cream too!
