Here is a super easy, light and delicious summer side dish! I made this several days ago and it tasted even better than when I first made it.
- 3 mini cucumbers peeled and sliced
- 1/2 med yellow onion thinly sliced
- 2 tbsp mayo
- 1 tbsp apple cider vinegar
- 1/2 tbsp fresh dill
- Fresh chopped basil
- Salt & pepper to taste
- Combine all ingredients but cucumbers in a bowl and whisk
- Add cucumbers and stir until cucumbers are coated
- Cover with plastic wrap and refrigerate up to an hour before serving or make a day ahead!!
