As of Sunday night I still had left over mashed potatoes so I decided to make potatoe cakes! These were super easy and very tasty. I recommend using at least day old mashed potatoes; using freshly made ones will be too creamy and won't hold together as well.
- 2 cups left over mashed potatoes
- 1 egg
- 11/2 cups breadcrumbs
- 1/2 cup shredded cheddar cheese
- 1 diced chipotle pepper
- 2 tbsp vegetable oil
- Green onions for garnish
- Combine all ingredients in a mixing bowl except 1/2 cup breadcrumbs and mix together.
- Add oil to pan over high heat.
- Use an ice cream scooper to scoop out potatoes then form patties.
- Put 1/2 cup breadcrumbs on a plate and press patty in crumbs on each side then add to pan.
- Cook until golden brown , about 1 min per side.
I had chipotle dressing from a local Mexican restaurant that I heated and put on top but you can use whatever you'd like! Ketchup, remoulade sauce, spicy mayo etc.
