Chipotle Cheddar Potato Cakes 

As of Sunday night I still had left over mashed potatoes so I decided to make potatoe cakes! These were super easy and very tasty. I recommend using at least day old mashed potatoes; using freshly made ones will be too creamy and won't hold together as well.  

**Ingredients** 
  • 2 cups left over mashed potatoes 
  • 1 egg
  • 11/2 cups breadcrumbs 
  • 1/2 cup shredded cheddar cheese 
  • 1 diced chipotle pepper 
  • 2 tbsp vegetable oil 
  • Green onions for garnish 
  1. Combine all ingredients in a mixing bowl except 1/2 cup breadcrumbs and mix together. 
  2. Add oil to pan over high heat. 
  3. Use an ice cream scooper to scoop out potatoes then form patties. 
  4. Put 1/2 cup breadcrumbs on a plate and press patty in crumbs on each side then add to pan. 
  5. Cook until golden brown , about 1 min per side. 
I had chipotle dressing from a local Mexican restaurant that I heated and put on top but you can use whatever you'd like! Ketchup, remoulade sauce, spicy mayo etc.
