Instead of heating up pork tenderloin left overs I decided to make some veggie pasta last night. It was mainly bc I didn't feel like eating meat & Bc Michael said he wasn't that hungry (he had eaten a slim Jim on his way home) ew. This is a pretty basic & simple recipe but super yummy & quick. You can always add meat to this if you want! Or tofu...just kidding! Don't do that.

SO pretty! 😍 I combined all the veggies in my cast iron skillet with olive oil, red pepper flakes, Italian seasoning plus salt & pepper. I then baked them at 350 for about 20 min. Perfection!
Adding the pasta to a sauce pan with a little melted butter, lemon juice and garlic, directly instead of straining it, helps make the sauce. I then added the veggies, cheese and some of the pasta water, tossed it all together and it created a delicious creamy cheese sauce that coated everything. So easy!!! ⬇️⬇️⬇️⬇️
**Ingredients**
- 1/3 head of broccoli
- Handful of grape tomatoes (left whole)
- 1/2 cup red onion cut into big chunks
- 1 small yellow squash cut into bit size chunks
- 2 tbsp capers
- 1 tsp red pepper flakes
- 1 tbsp Italian seasoning
- 1 tbsp olive oil
- 1 tbsp butter
- Juice of half a lemon
- 1/2 cup Parmesan cheese (extra for topping)
- 1 garlic clove smashed and roughly chopped
- 1/2 tbsp tomato paste
- Salt & pepper
- Your favorite pasta! 1 hand ful of spaghetti, angel hair or 1-2 cups macaroni, bow tie etc.
- Heat oven to 350 and cook vegetables seasoned with olive olive, red pepper flakes, Italian seasoning and salt&pepper for 20 min.
- With about 8 min remaining, start cooking pasta.
- Once pasta is going, melt butter in sauce pan on low and add garlic and tomato paste. Cook for about 5 min.
- Take out veggies and set aside.
- Take a pair of tongs or big slotted spoon, depends on your pasta, and add to sauce pan. Toss to coat.
- Add veggies and half parm cheese to noodles along with a splash of pasta water. Toss then add rest of parm with a little more pasta water until everything is nice and creamy.
- Plate and top with more parm cheese!!!
It's that easy!!! This is one of my favorite go-to pasta dishes and I hope you enjoy it as much as I do! Remember you can use any kind of veggie or pasta you'd like! Bon appetite!
