Turkey Shrimp Burgers

Long time no post! My bad...I know those 5 of you who actually visit this blog have been anxiously awaiting a new post.  So after Michael's b-day dinner I had left over shrimp + some uncooked.  Seafood is never good left over after a day and in my true "make chicken salad out of chicken shit" fashion, I decided to make these burgers! 1. Because Michael loves anything with shrimp and 2. It gave me an excuse to cook with chorizo!! Which is probably my most favorite of the pork variety...except bacon of course. These were really easy and FULL of flavor!!
*Disclaimer* I do not measure anything precisely so these are my best guestimates (except for the meats) But that's the beauty of cooking, you don't HAVE to have EXACT measurements!!! :)

BURGERS

  • 1 lb lean ground turkey
  • 4 oz chorizo
  • 1/2 Red onion thinly sliced
  • Chopped fresh pineapple (about 1/2 cup)
  • 3-4 med sized grilled shrimp per burger (grilled in spicy mango bbq sauce)
  • 2 chipotle peppers in adobo sauce (finely chopped)
  • Provolone cheese slices (1 per burger)
  • Pretzel buns

MANGO BBQ SAUCE

  • Stubbs spicy bbq sauce (~1 cup)
  • 1 fresh mango chopped

SMOKEY-LIME MAYO

  • 2 tbsp DUKES mayo (don't bother making this if you're not going to use Dukes)
  • 1/2 tbsp chili powder
  • 1 tsp smoked paprika (or whatever kind you have)
  • Juice of half a lime
  1. Using a blender add half the bbq sauce and half the mangos and blend.  Then add this with remaining sauce and mangos to the stove and let simmer about 5 min. Let cool then save about a couple tbsps for the burgers and add the rest to a bowl with shrimp. Set aside.
  2. In a large mixing bowl mix turkey, chorizo, pineapple and a couple tbsp of bbq sauce.
  3. In a saute pan add about 1 tbsp olive oil and 1 tbsp unsalted butter. Melt then add sliced onion and cook on med heat for about 25-30 min until caramelized.
  4. While onions are cooking (you need to be stirring these from time to time btw) form burger patties and either put shrimp on skewers for the grille or just cook them on a grille pan on the stove.
  5. On a preheated grille at about 375, add burgers and and shrimp. Cook about 10 min per side for burgers and until pink for the shrimp (about 8 min total).  Do NOT flip burgers more than once bc these are pretty delicate.
  6. While burgers are cooking make your mayo by combining all ingredients in a small bowl then put in the fridge to keep cool.
  7. About 1 min before pulling burgers off, add a slice of provolone cheese to each patty.
  8. Once you have the burgers and shrimp cooked its time to assemble!!
  9. Add mayo to top and bottom bun, then a burger patty, onions and shrimp!!
  10. Devour!!!
