Sweet & Spicy Sauce

OK! THIS SAUCE IS SO GOOD AND SO EASY!!!!!! You can literally put it on any meat or seafood and it's delicious! Me, I prefer to just eat it with a spoon...jk but its really that good.  I used it on shrimp and salmon kabobs Monday night and served with bacon risotto balls.  Ill post that recipe asap because they are too yummy not to share!

**Sweet & Spicy Sauce**
  • 1/2 cup no sugar added orange marmalade
  • 2 tbsp low sodium soy sauce
  • 1 tsp tubed ginger (can be found in produce section with herbs)
  • 2 tbsp light brown sugar
  • Heavy squirt of sriracha (yes i said squirt)
  • Dash of red pepper flakes
  • About 1/3 cup Trop 50 oj
  1. Combine all ingredients to small pot over med heat on stove and let simmer for about 5 min.
  2. Let cool before using as marinade.
YEP it's THAT easy!! :)
**Kabobs**
  • Med shrimp (about 4-4 per kabob) I bought 1 lb and used about half for two ppl
  • 1 salmon filet (skin off)
  • Pineapple chunks (i used pre cut from Publix)
  • Sweet & Spicy sauce
  1. Cut salmon into bite sized chunks and cut pineapple pieces in half.
  2. Marinate salmon, shrimp and pineapple in sauce for about 30 min.  (Use half the sauce and save other half for later)
  3. Skewer the salmon and pineapple together then the shrimp and pineapple together.
  4. Grille on 375 for about 7 minutes per side.
  5. Serve over rice, alone or with the bacon risotto balls like I did! Use the remaining sauce to drizzle on top, dip, or whatever I don't care.
Hope you enjoy! PLEASE let me know if step by step pictures would be helpful to post in the future!
